What I’m Eating
I just recently started air frying green beans. I know it sounds crazy, but they get crispy and delicious! It’s almost like eating french fries without all of the baggage! I just rinse and trim the green beans, pat they dry, toss them with some salt and pepper, and pop them in the air fryer for about 10 minutes – or until crispy.
What I’m Listening To

I keep this post updated as I fall in love with new podcasts and fall out of love with old podcasts. But this week, I listened to a phenomenal interview with Dotsie Bausch on the Rich Roll Podcast. It’s the story of a woman that came through a debilitating eating disorder and channels her competitive energy into cycling and eventually becoming an olympian! This is particularly inspiring because she came to the sport in her late twenties after never cycling before.
What I’m Reading
This essay from The Minimalists on finances and budgeting is simply gold. They apply the values and principles of minimalism to help you budget for success and financial freedom. If you’re in debt (which most of us are!) or simply just want to become financially free, this essay is well worth the read.
What I’m Watching
Apples and Amandas does my FAVORITE “What I Ate Today” videos on YouTube! They are always so realistic and relatable. Especialler her #idkjusteatit bowls! These are super helpful if you’re new to veganism and want some meal inspiration or if you’re stuck in a rut and want to see what other people are eating!
Who I’m Following
Kait and I are training for the same marathon, the NJ marathon, and her posts have been inspiring me and getting me jazzed like no other! She is setting goals and crushing them left and right! Tons of vegan runner foodie inspiration over there!
NYC half marathon – man, I just can’t get over you.🗽❤️ the hype was real!!! I waited years to get a spot in this race, but now it all makes sense. I was meant to run the new course. going over the Manhattan bridge & through lower east side, my heart was fuller than ever. I was beaming. the FDR, where I run daily, was flat, fast & gorgeous. & running through Times Square made the tourist in me smile. ✨ the Central Park hills tested me in every way, but I pushed. I fought. the 2nd half of the race I had no idea what my splits were (the signals were way off) so I had to trust myself & run by feel. crossing the finish I knew I had accomplished something new. when they put my medal on I actually burst into tears. I really cried for a second. I love the half marathon so much, & to celebrate the distance with this course i felt such a connection to, I got emotional 💔 running does that to me sometimes. I ran a 1:34:23 (7:12 avg) today, almost a 6 minute PR. no pressure, no expectations, just me & the streets I love. if you would have told me 2 years ago that I’d run a half that fast, I would have laughed in your face. but trust the process. relax. breathe. with less pressure, we all can thrive.
