Believe it or not, being a dietetic student isn’t all about food! It’s a lot of overwhelming science classes, labs, and studying. Last semester I had a LOT of long days that started at 8:00 AM and went on until 9:15 PM. As someone who is a true homebody, it was very (mentally) stressful to be on campus for that long.
I bring food with me everywhere I go so this would mean me bring breakfast, lunch, dinner, and snacks with me. So the day before would be a lot of meal planning and prep. When signing up for my classes this semester, I kept in mind how much I hated those long days being out of the house and I scheduled accordingly.
Now my longest day of classes starts at 11:00 and ends at 3:15 – no big deal! I can fill my mornings with meal prep and my evenings with studying and school work. Below is simply what I eat on a typical day of having classes from 11:00 – 3:15 after a workout of 7 easy miles.
Pumpkin nicecream: frozen bananas + frozen cauliflower + pumpkin puree + vega vanilla protein powder + blackstrap molasses + oats + seeds/grains mix
My Organic Chemistry II class is 2hr45min long so I have a 10-minute break to sit in the hallway and eat. I take advantage of this every day! I couldn’t possibly finish my meal in 10 minutes, so I usually eat half and save the other half for after class.
I had steamed veggies + savory oatmeal + black beans + tempeh + ketchup + tahini
I had some of my homemade pumpkin spice energy balls during my next class, Lifecycle Nutrition. I love that this class is scheduled after organic chemistry. I get super stressed out during Orgo and then I get to go to Lifecycle Nutrition and relax a little because I really enjoy the professor and the material!
Homemade vegan chili + avocado toast. I’ve mastered the art of vegan chili and I am SUPER proud of this recipe. I have it 5-7 times/week and have been doing so for over two years! I forced myself to take a week break to try and remember what life was like before I developed this recipe, but I just went right back to it!
My avocado toast always has dulse flakes + sriracha sauce + nutritional yeast + everything-but-the-bagel seasoning from Trader Joe’s. It’s quite addicting…
