I haven’t done a WIAW post in awhile! Usually, because I almost always forget to photograph EVERYTHING I eat, but I remembered today so I wanted to share what a normal day of plant eating looks like for me.
I practice intermittent fasting and I usually fast anywhere between 16-22 hours with the occasional 24 hour fast. Today was a 16 hour fast with an 8 hour eating window of 11:00-7:00.
My workout this morning was an easy 4 mile run + 45 minutes strength workout + 15 minutes rolling and stretching.
11:00 – After 17 hours of fasting, I had a Kevita Cayenne and Lemon kombucha – YUM!
I had a bowl of chocolate zucchini oats with a few banana slices and some Wild Friends Cinnamon Raisin PB for breakfast around 11:15AM.
A local store finally got these gut shots in, so I tried out a new flavor: Ginger Beet. Full of yummy probiotics! My favorite flavor is the Dill because it tastes like pickle juice, but it’s safe to say that Ginger Beet is a close second!
1:00 – Lunch (Part 1…) was steamed veggies (eggplant, purple asparagus, spinach, and beets) with nutritional yeast and marinara sauce. I’ve been loving this combo. Super quick and easy way to get in a TON of vegetables.
1:20 – Lunch (part 2…) was two red-skinned potatoes baked with everything-but-the-bagel spice mix from Trader Joe’s, two Hilary’s Broccoli Casserole Veggie Bites, and a piece of multigrain sourdough bread with a homemade chickpea salad.
1:45 – Before heading to work, I had a few handfuls of strawberries to satisfy my sweet tooth. They were on sale 2 for $5 this week at Whole Foods… I was expecting them not to be great because of the price but they were PERFECTLY ripe!
6:30 – After work, I came home to a fresh pot of my tried & true vegan chili. I’ve been making this every other week for literally years. It’s SO satisfying and tastes amazing. I always have a piece of avocado toast on the side… because avocado toast goes with EVERYTHING.
6:45 – My dessert was some of this Forager Project Vanilla Cashewgurt + fresh blueberries + 1 small brazil nut + a few walnuts + a few too many walnuts.
I always wrap up the day with these 3 supplements: probiotic + vitamin d3 + magnesium.
